What is Aged Sake

Aged sake is refined and matured in breweries for at least three years. This extended maturation develops a distinctive aromatic complexity and deep, rich flavor profile, creating a unique character that sets it apart from fresh sake.

Types of Aged Sake

Aged sake is characterized into two main categories: light-aged and full-aged. Light-aged sake preserves the original character while gaining smoothness, with a subtle color. Full-aged sake undergoes dramatic transformation in color, aroma, and taste, developing a bold and complex profile. Storage conditions and brewing methods create diverse expressions of aged sake's appeal.

History of Aged Sake

The tradition of aging sake dates back centuries and was widely enjoyed through the early Meiji period. Its decline was partly due to the Meiji-era liquor tax system (Zousekizei), which taxed sake at the time of pressing rather than maturation. This prompted breweries to innovate storage methods to manage tax obligations before aging.

About Our Society

The Reserve Sake Association was established in 1985 with the aim of promoting long-term aged sake and improving brewing techniques.

We conduct research on aging conditions and scientifically explore the changes that occur during the aging process, while also actively promoting aged sake as an important part of Japanese sake culture.

Our main activities focus on improving aged sake production techniques and promoting its appreciation, including technical workshops, lectures, and events to share the appeal of aged sake.
